Warm Turkey and Vegetable Rice

Autumn is upon us and while the weather is still warm enough to enjoy fresh, seasonal dishes, the cooler temps bring on cravings for hearty food. Our warm turkey and vegetable rice dish gives you the best of both worlds. It combines fresh, seasonal greens into a warm and hearty rice dish that is perfect for lunch or a quick weeknight dinner.

This dish uses our popular Oven Roast Turkey Breast. Turkey is an excellent source of protein, iron, zinc and potassium and is rich in vitamins B6, B12 and niacin, which are essential to our energy levels and the strength of our immune system. Skinless turkey is low in fat and has lower cholesterol levels than other meats. It’s also low in GI and can help keep insulin levels stable. Healthy, yummy and quick – this dish ticks all the boxes!

Ingredients (serves 4)

  • 3 table spoons of olive oil
  • 1/2 teaspoon of salt
  • 4 cloves of crushed garlic
  • 2 onions finely chopped
  • 1 can of cherry tomatoes
  • 1 cup of rice (1 cup of rice to 2 cups of water)
  • 2 cups of water
  • 1 cup of red capsicum
  • 1 cup of chopped carrot
  • 1 head of broccoli cut into florets
  • 1  cup of snow peas
  • 2 zucchinis chopped
  • 400g sliced Sunshine Meats Oven roasted turkey breast

Method

  1. In a medium pot, heat two tables spoons of olive oil over medium heat. Add the onions, carrot and garlic and cook for about 5 minutes or until golden brown.
  2. Add the rice, stir with a wooden spoon to coat well, and cook for 1 minute.
  3. Add the water, salt and can of cherry tomatoes to the rice and bring to a boil. Stir and decrease the heat to low.
  4. Cover and cook for about 20 minutes or until the water is absorbed and the rice is tender. Let sit for 10 minutes.
  5. While the rice is sitting heat 1 table spoon of oil in a pan over medium heat and add remaining vegetables. Stir fry the vegetables for 5 to 7 minutes or until vegetables are tender-crisp.
  6. Add Sunshine oven roast turkey to the pan and stir until turkey has browned
  7. Take the pan off the heat and mix the vegetables and Sunshine oven roast turkey into the prepared rice. Serve.
